A Kitchen Measurement Toolkit: What to Own and Why

Measurement in a kitchen covers weight, temperature, time and volume, and most kitchens are equipped for one of the four. Filling the gaps is inexpensive and has a disproportionate effect on results.

Weight

The foundation, and the tool that changes baking most. A general kitchen scale with around five kilograms capacity and one-gram resolution covers flour, water, portions and most cooking.

A second precision scale reading to a tenth of a gram covers yeast, spices, coffee and anything measured in small quantities. Ranges covering both categories, such as the Escali Scale lineup, list them separately because one device cannot span both ranges well.

Temperature

  • An instant-read probe, for meat, bread and anything cooked quickly
  • A leave-in probe with an external display, for roasts and long cooks
  • An oven thermometer, since domestic ovens are frequently inaccurate
  • A fridge thermometer, which is a food safety item most kitchens lack
  • An infrared thermometer, for pans, oil and surfaces

The oven thermometer is the one people most often skip and the one that explains the most baking failures. Ovens can be twenty degrees out from the dial without any obvious symptom.

Time

A timer that is audible from wherever you are, ideally with more than one channel, since cooking a meal involves several processes at once.

A phone works and has a specific failure mode: it gets picked up, the notification is dismissed while doing something else, or it is in another room. A dedicated timer on the fridge does one job reliably.

Volume

Still useful despite everything above. Measuring spoons cover quantities below the resolution of a kitchen scale. A jug is faster than a scale for large volumes of water.

Volume measures are a supplement rather than a foundation, which is the reverse of how most kitchens are equipped.

What Each One Solves

Weight solves the largest source of baking failure, which is inconsistent quantities. Temperature solves the largest source of meat and bread failure, which is guessing doneness. Time solves the largest source of everything-else failure, which is forgetting.

Between them they cover the majority of things that go wrong in a domestic kitchen, and the whole set costs less than a mid-range pan.

Keeping Them Accurate

Check scales against coins of known weight once or twice a year. Check probe thermometers in ice water and boiling water. Replace batteries before concluding a device has failed, since low batteries cause drifting in both scales and thermometers.

Recording

The final item is a notebook, which is not a measuring device and is what makes the others useful. Measurements taken and not recorded are consumed once; measurements written down become a recipe you own.
